This is who we are. Home for us is a cheese-making nirvana, with one of the most dynamic communities of artisan cheese-makers in the world (not to mention being the home of the world's favourite cheese). GRATE was born out of a desire to celebrate that. We use the best cheeses from the best dairies in the best county. Our other ingredients - organic sourdough or the bounty of Somerset’s hazy orchards - are also local and speak of our connection, both figurative and literal, to this place.
Ethics. They’re important. What little meat we do use is free range and high welfare; many of our ingredients are organic; and, championing the local as we do, our food miles are negligible. Local animals. Local food. Local people.
Eating the seasons - this really gets us going. What you eat and when you eat it are key markers in the calendar and seasonality should be celebrated. Our menu changes periodically to reflect this. Smoked Montgomery Cheddar, crab apple and blackberry jelly toastie in September? Yes bloody please.
